Day 1 Final Stop

Stop #4: Triple E BBQ, a chain (5 stores) in southern Illinois has our late night snack/dinner waiting. Now being a lover of pork product and getting closer in proximity to where “Pork is King.” Catherine decides to get the pulled pork sandwich, and Sean decided on the last half rack of Baby Back Ribs, naked, with the sauce on the side. Beans and Cole Slaw are added as sides because of how good they are reported by patrons. Additionally, a small 4 oz styrofoam container of both the mild and hot BBQ sauces. Returning to the room, Snow White playing in the background, the meat is enjoyed, simply smoked over hickory wood, in a smoker out back, but rich enough to stand alone or with sauce. Beans seam to be home made, but as the trip will prove, Hienz and Bushes can be stretched to homemade if you put your own meat in it. With thoughts of Sugar Hams dancing in our heads, we go to sleep, eagerly anticipating the next part of the trip.
